NÒVO – The Dinner Celebrating the New Chianti Classico Olio DOP

An unmissable evening celebrating the new harvest of Chianti Classico Olio DOP in the enchanting setting of Teatro Niccolini, Florence’s oldest theatre, transformed for one night into a stage dedicated to the gastronomic excellence of the Gallo Nero.

The protagonist of the evening will be a menu entirely paired with Gallo Nero olive oils, specially created by Chef Andrea Perini, the “chef all’extravergine” of Ristorante Al 588, renowned for his cuisine that places olive oil at the heart of every dish.
For the occasion, Perini will present a four-course menu inspired by the new harvest, an interactive journey through flavors and aromas, accompanied by selected wines from the Consorzio Vino Chianti Classico.

  • Shaved Parmigiano with roasted almonds and coarse salt
  • Savory vegetarian basket
  • Savory cornet with Chianina IGP tartare and mustard

Plated Menu

  • Beef sashimi served with three different Chianti Classico DOP oils
  • “Faux” celeriac risotto with its jus, Galaverna fondue, and pollen
  • Venison sirloin with borlotti bean purée and young spinach shoots
  • White chocolate cream dessert with peppers, strawberries, and goat yogurt espuma
