Conti Capponi – Villa Calcinaia

The same philosophy followed in the vineyard and the olive groves is also practiced in the cellar where fermentations are spontaneous through the use of native yeasts. The rackings are reduced to a minimum and the wines are aged in traditional vessels such as wood casks and concrete vats.
