Viticulture

We are currently in the process of converting from a certified and integrated sustainable farming method to complete organic farming.

Vinification

Grapes are harvested by hand after selection in the vineyard. Stems are removed and grapes are soft pressed. The must obtained undergoes spontaneous alcoholic fermentation. Once the fermentation is complete, the wine remains in contact with skins for 15/20 days before it is racked into oak for malolactic fermentation.

Maturation

50% of the wine ages for 21 months in 30hL Slavonian oak barrels. The remaining 50% is aged in barriques/tonneaux of second use. Minimum 6 months in the bottle
