The FEST Project (Future of European Sustainable Taste), funded by the European Union, supports and promotes awareness of European products with protected designation of origin. In this informational space, the opportunity is taken to explore in greater depth the recent performance of Chianti Classico’s “green gold,” its olive oil, over the past year. The article concludes with an overview of the activities organized and supported by the Consortium to promote and enhance knowledge of this designation of origin.

2025 OLIO DOP CHARACTERISTICS

Chianti Classico’s 2025 olive oil has been confirmed to be of excellent quality and quantities are in line with the historical average of the Black Rooster DOP. In terms of tasting notes, olive oils from early October tend more towards the herbaceous side with an intense bitterness and spice on the palate, while late October’s olive oil is more complex and varied on the nose and balanced in taste. Olive oil made in November has a pleasant balsamic aroma with flavours of almond and pine nut on the palate.

The trend among the Consorzio’s members is to complement the established traditional blends with the area’s most widespread olive varieties. Frantoio, Moraiolo, Correggiolo, Leccio del Corno, and Leccino in their pure form offer a varied and complex range of aromas and tastes that complement many members’ offerings.

Number of registered Consorzio Olio DOP Chianti Classico members in 2025: 181

Number of registered hectares of olive groves in 2025: 2,756.75

The winter we’re currently experiencing, with temperature lows between 0°C and minus 6°C, is creating favourable conditions for 2026’s harvest (the cold weather at this time of year eliminates most of the olive tree pests), so we are confident that within a matter of months we’ll be able to positively reflect on another good year.

THE CONSORZIO OLIO DOP CHIANTI CLASSICO INCREASINGLY ENGAGING WITH ITS MEMBERS

The Consorzio Olio DOP Chianti Classico assists producers in their ongoing efforts to create a product that expresses the uniqueness of the region. The focus is also on maintaining high standards in the components that actively contribute to improving our health and give the products their recognisable aromas and flavours, which are key parts of the identity of the olive oils.

The activities of the Consortium are not limited to just the olive groves and mills because it also looks to promote Black Rooster extra virgin olive oil through scientific and educational events around the world. This is combined with training activities on useful topics for professional growth, which over the past year have included seminars and training activities in companies organised and led by the Consorzio.

On February 16 and 17, the Stazione Leopolda once again hosted Chianti Classico Collection, now in its 33rd edition. This year’s event brought together 223 wineries – a new record of participation – and 680 Chianti Classico labels, presented to the public and the specialized press to showcase the newest vintages.

The theme of the 2026 edition was “Wine is Culture.” This is not an abstract statement, but rather an affirmation that, for Chianti Classico, has deep and well-documented roots. Since 1716, the year in which the official boundaries of the denomination were first defined, Chianti Classico has represented a unique example of a territory where wine is a direct—though not the only—expression of a cultural heritage layered over centuries.

The conflicts during the Middle Ages between the cities of Florence and Siena, followed by the rebirth of the area beginning in the 14th century, left this territory with a tangible heritage of buildings—initially defensive structures later transformed into villas and residences (150 villa-estates)—together with precious artifacts, archives, agricultural systems, and arboreal landscapes. It is important to bring this heritage to the attention of all those who appreciate Chianti Classico wine. From medieval Siena to Renaissance Florence, the synthesis can be found in the Chianti hills that unite these two symbolic capitals of the region.

In short, this territory possesses a rich landscape heritage filled with precious treasures (more than 300 protected historical sites), built and preserved over the centuries. This heritage has fostered a rare sense of belonging and protection for a productive area of great economic significance—one that has always invested in preserving and passing on this legacy. The winegrowers of Chianti Classico are not only guardians of the environment but also custodians of a shared cultural heritage.

In Chianti Classico, therefore, wine is no longer seen solely as the product of an agricultural practice, but as the result of a complex system made up of history, landscape, rural architecture, inherited knowledge, and a sense of belonging that becomes sharing and hospitality. For this reason, more than any other wine-producing territory, Chianti Classico can affirm that wine is culture, because cultural expressions are an integral and tangible part of everyday life. It is from the richness of this land that the Consortium also draws inspiration in responding to the recent European regulations that assign it the role of promoter and key actor in wine tourism hospitality.

The Numbers of the Collection

A total of 223 wineries participated, presenting 680 labels, including 190 Chianti Classico Riserva and 185 Gran Selezione. Nearly 400 journalists from about 30 countries attended the event and were able to taste the wines in a dedicated tasting area.

Chianti Classico DOP Olive Oil

The event also featured stands dedicated to the “green gold” of the territory, Chianti Classico DOP olive oil, with 32 different oils available for tasting at a dedicated tasting counter and 6 producers present with their own stands.
The highlight for olive oil was an in-depth seminar on Chianti Classico DOP olive oil, held on February 17 at 11:45 a.m.

Chianti Classico 2000

Another moment of cultural reflection was dedicated to Chianti Classico 2000, a project that marked a fundamental milestone in the evolutionary path of the denomination. The project was born from the need to renew viticulture in the Chianti Classico area while at the same time preserving and protecting the environment and the territory. Over time, it became a landmark in the history of European scientific research in viticulture.

The project lasted 16 years, divided into three phases, during which field tests and monitoring were carried out, followed by the collection and analysis of data, ultimately leading to the publication and dissemination of the results.

The seminar—attended by Dr. Carlo Ferrini, who participated in drafting and launching the project—was moderated by Daniele Cernilli, founder and director of the magazine DoctorWine and Chianti Classico Ambassador ad honorem. The discussion offered a critical reinterpretation of that experience, highlighting the legacy it left and emphasizing how Chianti Classico has been able to build its contemporary identity through that project.

Today, the “new” clones resulting from that research represent the best expression of high-quality viticulture, capable of conveying a strong sense of territorial identity while also helping vineyards adapt and respond to climate change.

The FEST Project (Future of European Sustainable Taste), funded by the European Union, supports and promotes awareness of European products with protected designation of origin. In this informational space, the opportunity is taken to explore in greater depth the characteristics and progression of the harvests that have produced Chianti Classico DOCG wines in recent years.

2025

Production: hl. 265,000

Growing season – The character of the 2025 Chianti Classico vintage is now becoming more clearly defined. The picture emerging is one of a year benefitted from a surprisingly well-balanced season with no drawn-out heatwaves and well-distributed rainfall. This combination meant that by September, the grapes were in ideal condition.

A harsh, prolonged winter ensured the vines benefitted from a complete and undisturbed period of rest. Spring followed suit, with stable temperatures, frequent but not excessive rainfall and no late frosts which provided conditions for uniform budding.

Summer continued this well-balanced development. Aside from two thermal spikes, one at the end of June and the other after mid-August, the weather was consistent. July was surprisingly mild and breezy, with notable diurnal temperature variation. Good water reserves were therefore retained until version.

Even those with concerns about vineyard health were reassured. Spring rains did not cause any critical issues and were managed promptly by the Chianti Classico winegrowers preventing any problems with mould.

At the beginning of September, everything pointed to a high-quality vintage, confirmed at a glance by the healthy, uniform bunches of Sangiovese grapes.

Initial reports from the wineries seem to reinforce these first impressions. The wines are now aging and already present as balancing clear aromatic profiles, well-textured tannins which are present but never overbearing and a freshness which could be the signature of this vintage. As is often the case in Chianti Classico, the potential of this vintage differs slightly from one area to another.

Chianti Classico reaches the pinnacle of the international wine scene with two outstanding recognitions in the prestigious Top 100 Wines of 2025, compiled by Antonio Galloni for Vinous.com, one of the most authoritative voices in wine criticism worldwide.

The first place, as the best wine of the year, was awarded to the Chianti Classico Gran Selezione Il Poggio 2020 from Castello di Monsanto, praised for its extraordinary finesse, depth, and its ability to authentically express the Gallo Nero territory. Galloni describes it as: “The 2020 Chianti Classico Gran Selezione Vigna Il Poggio is a total stunner. What a wine. Elegant and translucent, the 2020 impresses with a sublime, finessed personality that is impossible to miss. Fine tannins and lifted, sensual aromatics immediately announce a wine of utter class. On the palate, the 2020 is wonderfully deep and layered, with mind-blowing balance and exceptional pedigree. The 2020 is one of the very finest Il Poggios ever made. It has been nothing short of breathtaking on the two occasions I have tasted it so far. Don’t miss it!”

Alongside this exceptional achievement, the Chianti Classico Gran Selezione Vigneto Bellavista 2022 from Castello di Ama also appears in the ranking, having already been awarded a perfect score of 100/100. Galloni describes it as: “The 2022 Chianti Classico Gran Selezione Vigneto Bellavista is a total stunner. An exotic mix of blackberry, graphite, cloves, new leather, menthol, sage and lavender stains the palate. Readers will find a Gran Selezione of uncommon depth and gravitas. Time in the glass further reveals the wine’s profound complexity. Strong saline accents wrap up the finish. It’s the wine of the vintage in Chianti Classico and the purest essence of Ama.”

With two wines featured in the global ranking, Gallo Nero confirms its position among the great icons of Italian and international wine, serving as an ambassador of a territory where tradition and innovation have harmoniously coexisted for centuries.
