| ''Tradition is a feature of the soul and does not constitute a straitjacket''. Producing technically perfect wines maintaining an individual profil and conserving its proper soul, is the golden rule which inspires the estate Castello di Cacchiano. Under the direction of Giovanni Ricasoli-Firidolfi whose forefathers did not only ''create'' Chianti Classico wines but also Prosecco and Vernaccia, the company puts great attention to save both the inimitable characteristics of the autochthonous grape varieties (especially Sangiovese and Canaiolo) and the strong terroir imprint of the area of Monti in Chianti. All this occurs, obviously, in plain respect of the continuous agricultural, enological, and technological improvements. Wine production is basically concentrated on Chianti Classico (one per vintage), backed by limited quantities of Vin Santo and of a young red table wine. 4,700 olive trees, mainly ubicated on the terraced slopes around the castle, supply the precious material for the famous Olio Chianti Classico DOP. |

Free tastings of the current vintages are possible from Monday to Saturday for individual visitors. Larger groups (maximum 15 people) are required to make a reservation.

Wine and olive oil of the estate are on sale on the 17th-century premises of the former storage room for olive oil.

Appartamento ''Bindaccio'' The holiday apartment 'Bindaccio', situated in the south-west wing of the castle, offers generous space (over 200 sqm, distributed on three floors) for a maximum of seven people. The house offers four bedrooms, double living room, dining room, kitchen, three bathrooms and two terraces. The interior is hold in the typical Tuscan country style. The upper terrace offers a breathtaking view over nearly the whole province of Siena. Guests may also use the small private garden (with pool).
